- 16 oz Velveeta cheese, cubed
- 2 (10 oz) cans Rotel tomatoes (choose mild, original, or hot)
- 8 oz cream cheese
- 1 lb ground beef (optional)
- 1–2 tbsp taco seasoning (optional)
- Chopped jalapeños (optional, for extra spice)
- Green onions (optional, for garnish)
Instructions
- Brown the ground beef (if using) in a skillet over medium heat for about 5-7 minutes. Drain excess fat.
- Cube the Velveeta cheese into 1-inch pieces.
- In a large pot, add the Velveeta cheese, Rotel tomatoes, and cream cheese.
- Cook over medium heat, stirring frequently, until the cheese is fully melted and the dip is smooth (about 10-15 minutes).
- Stir in the cooked beef and any optional seasonings. Cook for another 5 minutes, stirring occasionally.
- Serve warm with tortilla chips or your favorite dippers.
