Instructions
Step 1: Prepare the Oven & Pan
- Preheat your oven to 350°F (175°C).
- Grease and line a 9×5-inch loaf pan with parchment paper.
Step 2: Mix the Wet Ingredients
- In a large bowl, mash the bananas until smooth.
- Add pumpkin puree, vegetable oil, liquid sweetener, vanilla extract, and eggs.
- Whisk until fully combined.
Step 3: Prepare the Dry Ingredients
- In another bowl, whisk together flour, granulated sugar, brown sugar, pumpkin pie spice, baking powder, baking soda, and salt.
Step 4: Combine Wet & Dry Ingredients
- Gradually fold the dry ingredients into the wet mixture.
- Stir gently until just combined (do not overmix).
- If using, fold in chopped nuts and chocolate chips.
Step 5: Bake the Loaf
- Pour the batter into the prepared loaf pan.
- Smooth the top and sprinkle with pumpkin seeds (if using).
- Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
Step 6: Cool & Serve
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack.
- Allow it to cool completely before slicing.

- Banana Ripeness: Overripe bananas (with brown spots) add natural sweetness and moisture.
- Flour Measurement: Spoon flour into a measuring cup and level it off to avoid excess flour.
